Let’s Get Saucy with Brisket and Beans

Hey there, friends!

Are you ready for crisp air, the magnificent colors of fall and perhaps a tailgate adventure? Autumn is the perfect time of year for one of my favorite ways to cook: chuck wagon style. Perhaps it's not exactly the cowboy way, but I love getting the coals to just the right temperature, choosing aromatic woods that lend unique flavors to my food, and low, slow cooking to bring out the best in outdoor meals.

This month I'm here with some fun and very flavorful ideas for preparing classic cowboy food: brisket, spice rubs, barbecue sauces, and perhaps the best pot of beans you'll ever make.

You don't have to be a professional to smoke brisket at home. This step-by-step tutorial is for ordinary folks who have the desire to smoke amazing brisket with the tools on hand. You can do it without pink butcher paper and expensive equipment.
 
 
 
 
 
They'll be talking about these beans until the cows come home! This recipe features ground beef, bacon, jalapeΓ±os, onion and your favorite barbecue sauce. Instructions call for baking in the oven, but a Dutch oven over the campfire or coals will turn out some mighty fine beans.
